150 g cooked, mashed sweet potato
1 Red Pepper
1 egg
4 tbsp oat flourĀ
100ml Better Hydration
š Method
- Preheat oven to 180°C.
- Mix mashed sweet potato until smooth.
- Add egg and combine.
- Stir in flour.
- Add Better Hydration slowly until you get a thick muffin batter.
- Add peppers
- Spoon into muffin tray or silicone moulds.
- BakeĀ 25ā30 minsĀ until firm and lightly golden.
- Cool fully before serving.
