Sweet Potato & Red Pepper Bakes

šŸ“ Ingredients (6–8)

150 g cooked, mashed sweet potato

1 Red Pepper

1 egg

4 tbsp oat flourĀ 

100ml Better Hydration

šŸ’™ Method

  1. Preheat oven to 180°C.
  2. Mix mashed sweet potato until smooth.
  3. Add egg and combine.
  4. Stir in flour.
  5. Add Better Hydration slowly until you get a thick muffin batter.
  6. Add peppers
  7. Spoon into muffin tray or silicone moulds.
  8. BakeĀ 25–30 minsĀ until firm and lightly golden.
  9. Cool fully before serving.
